Smoked Gouda Grits

This recipe is another one introduced to me by Micah. He'd whip this up at the firestation while he was on shift and it was always a hit. It goes well with shrimp, or as a side dish.


  • 8 cups chick broth or water
  • 1 stick of butter
  • 2 cup bag of cheese (Smoked Gouda preferrred, or Monterey if you can't take the flavor of Gouda)
  • 2 cups of gritz (Quick gritz preferred, but regular gritz will work)
  • Seasoning to taste with Tony Chachere's Creole Seasoning, black pepper, and garlic powder


  1. Bring the chicken broth or water to a boil
  2. Add the butter and stir until melted
  3. Add the gritz and stir until the gritz are cooked
  4. Add the cheese and stir until melted
